In the mood for something delightfully tasty made from the comfort of your own kitchen?? You’re in luck! Grab these few simple ingredients and whip up something that will make you feel fancy, fresh and filled with food joy!
Langostino Quesadillas with Mangos & Cilantro
I always keep a frozen bag of Shrimp or Langostino Tails from Trader Joe’s on hand. The reason? Days like today when I’m feeling like something fun!
Grab a bag of your favorite little fishies, thaw and cook in a skillet with Eggplant Garlic Spread from Trader Joe’s… the same mouth watering mixture I’ve used for tacos that will tickle your taste buds! Add a squeeze of lemon juice, garlic, salt, pepper, chili power and italian seasoning to taste.
Next, grab some of the best whole grain tortillas you can find – Ezekiel always has great options!
In a skillet sprayed with non-stick, put your first tortilla down and sprinkle with 1/4 to 1/2 cup shredded cheese of your choice. I use a low-fat mixed blend.
Top with your cooked fishies mix (make sure to spoon it out of the skillet, leaving extra juices behind). Sprinkle with another 1/4 to 1/2 cup shredded cheese and your second tortilla.
Let it all melt together, flip, brown the other side and transfer onto a plate when finished. Split your quesadilla with a loved one or save half for later!
To make it all a little more exciting, chop up some mangos and cilantro to have on the side. I use frozen mangos I always keep on hand for smoothies, creative kitchen adventures, etc… In this case, I actually had extra mangos that I thawed while making my Tricolor Quinoa Salad and decided to give them a taste with my Langostino Quesadillas….. Let me just tell you, it was the right decision because this combo is deeeeelicious!
