In case you haven’t noticed, The Love Fit Life is all about FOOOOOD these days! Since I’m constantly busy beyond belief and I don’t have an oven at home (which is usually my preferred method of cooking), I gravitate towards take out and quick meals more often than I’d like to admit. That’s just not sustainable though. Not only does it cost a lot of money (even if you’re picking “cheap” meals) but it’s not usually healthy.
So, what’s the solution? I don’t know, to be honest…. but there won’t ever be a better time to get creative, try new things and make positive changes. Plus, a lot of my “standard” prep meals have grown so boring I can’t stand it. For instance, I’m great at making salads for an entire week, but sometimes I just don’t want lettuce!!! Sorry lettuce, I still love you, but I need a break…
Recently when I discussed this dilemma with my fellow fit chick and incredible friend Darby, we swapped a ton a great ideas…. some of which you’ll be seeing soon on LFL directly from Darby! One of the quick meals we discussed really caught my attention – spaghetti squash! I’ve had this delicious dish before, but I’ve always had it baked in the oven so it’s not something I even think about making in light of my kitchen limitations. Darby politely laughed at my excuse and taught me you can just microwave that sucker!! Yes, I’m a little slow to the party sometimes.
HOORAY FOR MICROWAVE SPAGHETTI SQUASH!!!
Stick that whole squash in the microwave for 1-2 minutes to soften up then cut off the ends, poke with holes and put back in the microwave for 4-5 minutes or until it’s soft enough to shred. When you remove the seed section from the middle, the meat of the squash literally just shreds perfectly with a fork. It’s an awesome substitute for pasta and literally takes minutes to make.
I took my squash noodles and tossed them into a skillet with zucchini, a bit of tomato basil pasta sauce and shredded cheese to make it a little more gooey and delicious. The part I’m most thrilled about is that I just made it at the same time I was cooking dinner then put it in a tupperware and took it for lunch the next day. Not joking, it was so good I almost cried when it was gone. Oh and I also ate it like 2 hours earlier than my usual lunchtime because I was so excited!
